I finally have my boys about totally switched over. I feed pork, turkey, and chicken. Is there any meat they can or should not have? I'd like to start expanding and trying different stuff.

The only meats they cannot have are "altered" ones. Ham, lunch meats, sausage, etc. These all have spices, salt, smoked, cured, etc. Anything else is fair game

Yep like sherrylynne said, just don't feed them meat that has been cooked, spiced, or processed. Cooked meats are fine for like treats, but as a meal it has very few nutrients left that are good for ferrets.

So beef is what I was really wondering about... I'd doesn't seem like something they would naturally eat that's why I was wondering. I can't see a wild ferret taking down a cow, no matter what it thinks.

No, it wouldn't take down a cow But how much do you want to bet when the wolves are full up, a wild steppes or european weasel will sneak in for a snack on freshly killed deer?

lol where in the world do you get bison? I am just having a hard time finding different meats, especially organs.

Bison meat/steaks are actually easy to get here, but it's not cheap(Calgary). We have bison farms not far from the city. Not sure about the US, though. Mine, unfortunately, will not take bison for love nor money. But then, I only tried the commercial raw variety with them.
