My mom has a camera I use a lot - a Canon Rebel XTi. I want to be able to take pictures with a very shallow depth of field, where a very small portion of the photo is in focus, and the rest is blurry. She has an instruction manual with it and it says to set it to "AV," and turn the dial. When I do that, the depth of field is the same, but the exposure is totally different! When it's higher on the scale, it's overexposed, when it's lower, it's underexposed. How can I get pictures that look like this? (Not planning on taking a bunch of flower pics, but couldn't find a good example). www.alexwisephotography.net/blog/wp-content/uploads/2008/08/img_0013.jpg

I believe you want a macro setting. Macro shots focus the way you're explaining, but the downside is that it is a long exposure so both subject and camera need to be very still.
