You are very lucky, babies can be very easy to switch to raw and whole prey, as you have already learned with the pinkies!
My boyfriend recently brought a ferret home between 6-8 weeks old. Within 5 minutes she was chewing on a chicken drumstick, and later that night she had a whole adult mouse for dinner! Now if only adults were that easy!
That is great that you can get meat from your work. Everything you listed would be great for your baby. I don't feed seafood, so you will have to wait for someone else to answer your question for that. I do know that only some sea food is okay to eat, so please wait for assistance before you buy any fish or shell fish for your fuzzy. As far as hearts, all hearts should be fine, and I don't think any heart are "better" or "worse" than others, but maybe another member has thought on this.
A few more things you could probably get at work to supplement kibble with:
Chicken wings, drumsticks, boneless meat, and any organs
Cornish game hen
Boneless beef, pork, lamb, veal, turkey, etc.... make sure it is boneless
Any animal organs you can get your hand on
As for bones, most ferrets won't chew bones like a dog will, but bones are an important part of every ferret's diet. I would never give my ferrets a rib bone because ferrets who TRY to eat a bone this hard can damage their teeth. Ferrets can eat any chicken bones, small rabbit bones, and cornish game hen bones. Anything larger, like most turkey bones, pig, of cow bones will hurt your babies teeth.
As for how frequently you can feed pinkies, you don't want to feed them too frequently because they are low in calcium compared to adult mice. I would recommend feeding your baby larger and larger mice until they are eating adult size... of course this is if you are comfortable with it, I don't know if you are feeding live or frozen. Once you are feeding adult mice, make sure to throw in young and pinkie mice occasionally for variety. If you are feeding adult mice, I would say you could probably feed an adult mice per day, in addition to it's regular kibble or other raw foods. If you baby is like mice, he or she will grow like a weed and eat like a horse! My baby who is about 3 months old can eat about 4 adult mice a day if I let her!
I could keep going with suggestions but I will finish this off quickly so I don't go on forever...! If you do plan on feeding kibble with raw and whole prey to supplement, I would recommend changing your baby from Marshalls to a higher quality kibble. Many people like EVO, Wellness core, Wysong, and Ziwipeak foods. Of course, I recommend exploring your options with raw and whole prey diets without kibble because those are ideal for ferrets
