I'm getting ready (in about 2 hours) to make the soup and I'm not sure if I should leave the skin on the chicken or not. We are using a food processor so I'm not sure if it would work or not.

Leave the skin on! I'm pretty sure the skin is extra fatty, and it still has nutrients in it that your ferret can benefit from

leave the skin on it has lots of good fats and protien for them it also helps liquidfy the meats
