I don't know what scale, but one way to keep them still is to offer a treat that needs to be licked. So you could set the ferret on the scale, and then hold out a finger or spoon and usually they will not move while licking away at the treat.

I use a digital baby scale. Accurate to within 1/2 an ounce.

We have two. A postage scale (non digital) and a kitchen scale (non digital). You can find them at thrift shops. We were given the postage scale for free and the kitchen scale cost about $3 at Goodwill and it weighs up to 25 pounds. What we do is put one of those plastic shoe storage boxes on the scale, set it back to zero (because the box weighs something obviously) drop a yummy treat in the box then put the ferret in.

I use a fish scale I had on hand. It's not very accurate, but I can tell if they're gaining or losing. It was around $7 at wal-mart. You can get digital ones too that are more accurate. And since they have a hook, I just put a harness on them and hang them. It takes little more than a second.

I bought a digital postal scale off of ebay for about 20, and it is very accurate. I just hold a treat for them to lick and sniff while being weighed. I put an old plastic folgers container on the scale, and zero it out (so the container isn't a part of the weight), then I put the ferret in the container. I keep monthly track of the weights, and it has put my mind at ease.
